Peanut Butter Protein Popcorn Bites
Your new meal-prep obsession: bite-sized, protein-rich popcorn power balls.
Yield: 4-6 servings
Ingredients
4 cups popped yellow popcorn
1/2 cup rolled oats
1/2 cup ground flaxseed
2 tablespoons chia seeds
1/4 cup creamy peanut butter
1/4 cup honey
1/4 cup peanut butter-flavored protein powder, optional
1/3 cup dark chocolate chips
1/4 cup chopped roasted peanuts, optional
1/4 teaspoon kosher salt
Directions
- Line rimmed baking sheet or large plate with parchment paper. Place popcorn in large bowl, removing any unpopped kernels.
- Add oats, flaxseed, chia seeds, dark chocolate chips and chopped peanuts, if using, and salt to popcorn and toss to combine.
- Add peanut butter and honey to small saucepan over low heat. Cook, stirring frequently, until melted and smooth, about 2 to 3 minutes. Remove from heat and whisk in protein powder, if using, until smooth.
- Pour peanut butter mixture over popcorn mixture and toss gently until evenly coated. Let cool slightly for 2 to 3 minutes, then scoop heaping spoonfuls onto prepared baking sheet, gently pressing each into small bite-sized portion.
- Refrigerate bites until firm, about 20 to 30 minutes before serving.
Tip: Store bites in an airtight container in refrigerator for up to one week.
